Ahmad Halawa, also known as Chef Halawa, transformed a love of food into a bridge between cultures. Once immersed in the high-pressure world of advertising, he discovered that his true calling lay not in boardrooms but around a table. Drawn to the vibrant flavours of the Levant and the stories they carry, he began hosting informal dinners at his home, sharing meals that celebrated his Palestinian roots.

What started as casual gatherings quickly evolved into a full-fledged culinary practice. Halawa now crafts private dining experiences, pop-ups, and immersive catering events that transport guests on a journey through Levantine cuisine. From fresh, lively salads to rich, fragrant mains, each meal culminates in the live preparation of his signature Knafeh Nabelsiyeh, creating moments of shared joy and connection.

In 2025, Halawa expanded his culinary world with a renewed focus on giving back. He curated “The Palestine Supper Club” in New York; a fundraising dining experience, created in collaboration with ANERA and Haven, to support Gaza. The event reflected his commitment to using food as a vehicle for community, solidarity, and meaningful impact.

Through his work, Halawa turns food into storytelling. Every dish honours heritage, evokes memory, and fosters belonging, inviting diners not just to eat, but to experience the culture, warmth, and history of the Levant in every bite.
